As you know, I love repurposing leftovers and oftentimes they come out even better then the first dish. The other night, I had a good bit of leftover grilled chicken.
This was the first dish – nicely grilled chicken quarters with grilled peppers, shrooms and tomatoes and it was delish.


But the next show was even better, so this is the one I wanted to tell you about. I chopped up the leftover chicken (grilled dark meat is the juiciest for this) and gathered up all my taco toppings!

The grilled chicken, some bell peppers, corn, red cabbage, tomatoes and cheese. I baked together all but the red cabbage just enough to melt the cheese and lightly toast the soft flour tacos.

Then I gathered up some great condiments to pile on. A pineapple mango salsa (thanks to Wegmans for preparing this for me!), my fave avocado salsa by Tostitos (a must in every pantry), some plain Greek yogurt as a sour cream sub, and a cilantro paste.

I added the red cabbage and then all the condiments and a little wedge of lime for a final finishing squeeze. Super easy, beautiful, and delicious grilled chicken tacos!!


Aside from hiw attractive the “leftovers” masterpiece looks – it sounds delicious and hiw great is it to get 2 terrific meals from 1 grill session!!
