Rosemary, thyme, sage and lavender. As well as the citrus – lemon and orange. Plus the onion and garlic. And of course butter!!! I made an herb butter compound to spread upon and stuff under the skin.
Squeeze some of the juices on top and then stuff the rest as well as the onion and garlic inside the cavity and in the nooks and crannies of the turkey. Zest up that orange for now and later. Microplane is my new kitchen toy!
One thing I’ve done for the last few years is start by cooking the turkey breast-side down for the first hour. It lets the fat run into the breasts and makes them extra juicy!!! Mmm!! Juicy breasts. This is one time of year when it’s politically correct to say that!! Hehe. Ok, turkey is in at 325 under a foil tent!
