So I’m not the biggest egg fan – I like the stuff in the omlette better than the eggs – but these fresh eggs from my husband’s coworker’s chickens at home are so good!! No white stringy stuff, just clear around that great big sunshine yolk. Rich and flavorful. I made an awesome omlette with them the other day and then this morning, I just made one egg over-easy with fresh tomato, asparagus, and yellow pepper. I sautéed the veg first, then added the egg and made one gentle flip prior to plating. Then, I added smoked salmon and avocado for a great Monday morning breakfast to help ease into the week. So yummy!!
