Cheese and bacon were my highlights for the dinner I made last night. I can’t think of two better salty delights!! Halloumi is so cool – if you haven’t tried it, you must. It’s a fryable cheese made in Cyprus. It gets squeaky, yes that sounds weird, but it’s awesome and if you’ve had it, you know what I mean by squeaky. I don’t think I’ve ever used that word in a food description. Anyhoo, halloumi is not easy to find, but it’s out there in a few respectable cheese departments. You just slice thick and sear each side til it’s browned and then do anything you want with it. I often use it as part of a cheese and fruit breakfast.
Last night, I topped my veggies (a sauté of fresh corn, asparagus, Campari tomatoes in EVOO, white wine, and a little maple balsamic vinegar) with Halloumi along side some avocado chunks.
And bacon jam! Tops a seared salmon filet just perfectly. Then I drizzled a little olive oil and dabbed/smeared the plate with a pineapple mustard (Hickory Farms). Voila!

What a beautiful plate! That looks so delish – like right out of a food magazine! The sweets with the salty hallloumi the savories and acidics – go girl! When will you open a cafe???
